    I would much rather overproof than underproof…. Overproofed bread still tastes good to me, whereas underproofed bread is gummy bullshit

    My wife just asked me to make another overproofed loaf because the last bread I made I over proofed. I’m kinda starting to think I’ve probably made slightly undeproofed my norm.

    Anyone ever see a glass container like that? I do everything possible to keep as much plastic out of my cooking process but I really like the idea of having a straight sided container to gauge rise.
