Roast 3 beets (120 kcals) and a head of garlic (23 kcals) wrapped in foil at 425° for 45 minutes. Remove skin from the beets when cool enough to handle. Add half of the roasted garlic and all the beets to a food processor.

Also add:
Handful of walnuts (this is completely optional, don't add if you can't afford the calories) (30 g, 185 kcals)
Handful of Parsley (3 kcal)
2 tbsp plain, nonfat greek yogurt (12 kcals)
2 tbsp lemon juice (6 kcals)
2 tbsp tahini (180 kcals)

Pulse until combined and there are no large chunks. Serve with crudites, add to any bowl, smear on a sandwich, etc.
