    Tofu is healthy. A bazillion people have used it as a staple protein for eons and have enjoyed long healthy lives.

    You can roundly ignore social media (including YouTube) influencers scaring you about what not to eat.

    AGEs aren’t good for you. Tofu and many other foods that are high in protein and starch contain them ( not just plant food either). You can reduce them by cooking at a lower temperature. I generally try to to stress about it, but if I have time, I’ll cook stuff where it’s a concern at 350F in the oven.

    Tofu is LOW in AGEs. Tofu is prepared entirely by boiling, which is one of the better cooking methods to reduce AGE formation. The second you broil or pan fry tofu or apply any other high heat cooking method to it, you vastly increase the amount of AGEs, just like ANY FOOD.
