Habanero hot sauce with sweet onion, carrot, red bell, garlic, lime juice

Ingredients
6 oz. orange habaneros 1 sweet onion 2 carrots 1 red bell pepper 12 cloves garlic 1 lime’s juice 1 tsp kosher salt 1 tsp ground black pepper 3 tbsp extra virgin olive oil 5 cups white vinegar
Method
In a large pot, sauté the vegetables and peppers in the oil until desired char is seen. Add vinegar. Bring to boil; reduce heat. Simmer to reduce by 25% (about 30 minutes). Stir in salt, pepper and lime juice.
I use an immersion blender, and I bottle with a ladle and funnel, using the hot-fill-and-hold method.

Awesome! Sounds and looks delicious. Those little bottles are great to give to friends to try/if you suspect they won’t use a big bottle. They’re a pain in the ass to fill though.
