We used to have this happen the first time using new oil. Not every batch of oil did it. If you look it says anti foaming agent is added to the oil but then it still foams sometimes..

I saw something like this and discovered someone had filled the flour bin with self rising and that seemed to be the cause. It was a fryer that had already been in use the previous shift, but the flour was new.

I mitched school when I was 15 with my best friend. We went round to her sisters house as she had a key. We decided to use her sister’s fryer to make chips, not realising that she had put washing up liquid and water in it to soak the grease off. Being young and dumb we didn’t realise it was not oil in the fryer. The end result ended up looking similar to this

This is why I boil out with just water. It takes a little longer, but i have a 0% chance of getting cleaning chemicals in our fryer that way.
