I grill 6-7 times a week but have always used natural gas or bottled gas connected bbq’s.
Recently got a small charcoal grill, still leaning but my goodness.. so good.
This was just some gyros chicken thighs. Any veteran tips I should know cooking with charcoal?

Charcoal is the tits. It’s unfortunate that the stigma around charcoal leads many to believe that charcoal is too much work and so people are hesitant to try it. It’s not instantaneous as gas, and you have to watch your meat heat, but its so simple and easy to light with a charcoal chimney.
Stick to lump charcoal. I prefer Mesquite. Briquettes aren’t as good as they used to be, they burn too fast and smell too much like chemicals, IMO.
Great job OP! We smoke-grill with lump charcoal 90% of the time as there’s nothing else that imparts smkoe flavor like it.
Also, what are the sword skewers are those? Wicked.
