Low Net Carb Bamboo Fiber Gnocchi Recipe – Made of Bamboo Flour, Keto, Low Carb And Gluten Free
Full Recipe (for 2 servings)
3 large room temperature eggs
1/4 tsp salt
1tsp konjac gum
56g of bamboo fiber
14g of whole psyllium husk
75g warm water
How to make bamboo baking flour:
Steps:
Measure all the ingredients into a mixing bowl.
3 room temperature large eggs,
1/4 tsp of salt,
1 tsp of konjac gum powder,
56g of bamboo fiber,
14g of whole psyllium husk,
Or if you have premixed bamboo baking flour, use 70g of it (56g of bamboo fiber + 14g of ground whole psyllium husk).
Finally add 75g of warm water.
Mix them thoroughly with an electric mixer until the dough is elastic (about few minutes).
Then place the dough onto a silicone mat and roll lightly with your hands for a few seconds.
Cut the dough for 4 pieces.
Now gently roll each dough into a snake-shaped log on a floured (bamboo fiber) surface, roughly the thickness of your thumb.
Cut pieces every 3/4-inch.
Cook the gnocchi in batches by dropping them into the boiling salty water for about 3 minutes.
This low net carb gnocchi turns out buttery soft and has the same delicate bite as traditional gnocchi.
