    **Ingredients:** One onion chopped, 3 cloves of garlic minced, 2 Tablespoons Tomato Paste, 1/2 teaspoon Himalayan pink salt, 1/2 teaspoon black pepper, 8 oz sundried tomato (not packed in oil), 5 cups of low sodium veggie broth, 1 pound whole grain Penne Pasta, 5oz fresh chopped kale, 1/2 cup nutritional yeast.

    **Cooking:** Heat a non stick skillet on medium high,,while heating chop the onion and cut sundried tomato into strips lengthwise,,cook the onion pieces until soft,,add garlic with 2 tablespoons of water for 1 minute,,add tomato paste stirring then salt/pepper,,toss in tomato strips and cook 1-1/2 minutes,,Pour in veggie broth and increase heat bringing to a slight boil,,add the pasta and reduce heat,,cover the skillet and allow to simmer for 10 minutes,,stir in the kale and cook until it starts to wilt,,add nutritional yeast and stir until pasta is smooth and creamy.Your Low-Fat/Low/GI pasta is now ready to serve!
