Brown the ground beef, simmer it with the onion, chiles, salt, pepper and 1/2 cup water for 15 minutes. This is where you have to do some math. I made 5 portions each with 2 tortillas. So, I divided the beef mixture by 10 and the cheese and enchilada sauce by 5. Put some enchilada sauce in the bottom of a baking dish. Roll each tortilla with ground beef and some cheese and put it seam side down. Top it with the rest of the enchilada sauce and cheese. Bake at 350° F for 20 minutes and then broil for 3 minutes. The rest of the ingredients are your fixin’s, obviously have it however you want what do I care lol. I mix Greek yogurt with a little lemon juice and tell myself it’s sour cream. I do bake them in separate containers for prep but you can do it in one dish.
