Another fantastic meal at SingleThread. This was my fourth visit overall and my second time having lunch there.
The 7-course menu included the following:
* Meals always start with an assortment of fish and shellfish, a panna cotta with shaved black truffle and five-spiced duck liver * Potato purée with osetra caviar and tempura fried ? in ponzu sauce * Salad with goma dofu and kiwi * Crispy amadai in cauliflower dashi with preserved lemon, yubu and Wasabina. This was the standout among standouts for me. Just a delicious combination of tastes and textures. * Intermezzo: Buddha’s hand, olive oil, black tea and Douglas Fir * Wagyu with cabbage, crispy kale, garlic-miso sabayon and prune preserves * Koshikari, short rib, smoked American chestnut, broccoli and pickled vegetable * Dessert: sunchoke semifreddo encased in chocolate finished tableside with more chocolate sauce and served with vanilla bean ice cream and mochi * Petite fours
