At this point very young yet fairly open – you can tell there were several layers of complexities still budding/in the making.
Had a toasty, citrussy nose that evolved to having notes of baked apples.
Mousse-y, citrussy, lightly briochey on the palate without an overly stark acidity. Green apples with a slight mineral crunch but nothing to pronounced. Evolved very little on the palate over the course of 2 hours.
This paired extremely well with the shirauko (itty bitty fish chips) dusted in karasumi (japanese bottarga).
If this CdM were any more mature it would’ve probably overpowered the meal – so for the sake of the meal this was a great pairing given where it was now. However, if assessing the wine on its own at this point, I felt it might have been more worthwhile going for the regular vintage krug or an older NV.
