easy vegan crumpets

    ingredients:

    * 4g yeast
    * 6g sugar
    * 235g warm water
    * 185g all-purpose flour
    * 4g salt
    * 4g baking powder

    method:

    1. in a small bowl, combine the yeast, sugar, and warm water. whisk gently for a couple of seconds to combine. allow to bloom until foamy.
    2. in a separate larger bowl, whisk together the flour, salt, and baking powder.
    3. pour the yeast mixture into the dry ingredients. whisk by hand for around 3 minutes to incorporate more air into the batter.
    4. cover and set off to the side for at least 30 minutes (up to one hour). the batter should have very small air bubbles on the surface when it’s ready.
    5. grease a cast iron pan with vegan butter over medium heat. prepare four ring molds by greasing the interiors with vegan butter.
    6. place the ring molds in the prepared, hot pan.
    7. spoon batter into the molds until each is about halfway filled.
    8. allow to cook until the edges by the mold start to appear dry (about 5 minutes). carefully remove each mold and flip each crumpet. if the crumpets are a bit too brown, reduce the heat slightly.
    9. cook for another 1-2 minutes until both sides are golden brown.
    10. remove and place on a wire rack to cool. repeat steps 5-9 until all the batter has been used up. this should make 7-8 crumpets.
    11. slice in half and toast if desired.
    12. enjoy with vegan butter or jam (or both)
