











Had a chance to go to Behind and try their tasting menu. Overall some excellent dishes, a few just solid ones, and nothing that really missed. They're not doing anything particularly innovative, but the cooking is very solid. Great for any seafood lovers, as that's the focus of their menu.
Service was very friendly. More casual/personal than professional. Most dishes were served directly and explained by the chefs.
Prawn & White Wine Consommé – Warm, comforting, but nothing particularly memorable. Just a good seafood broth to start.
Cornish Mackerel – Two preparations: a filet with leche de tigre and a mackerel rose with apple and plum. Filet was very tender.
Mullet with Finger Lime & Grape – Beautiful plating, a bit hard to eat. Nice balance of bitter and sour, but not the most exciting bite of the night.
Chalk River Trout, Nori, British Kimchi, with Onion Ginger Gin Consommé – Big umami bomb. Deep, dark flavors, salty but not overpowering. The kimchi wasn’t particularly fermented, but had a nice textural balance. Nori didn’t add much for me and was a bit soggy.
Cornish Plaice, New Potatoes, Beurre Blanc with Trout Roe & Smoked Kippers, Sea Vegetables – This one was a hit. Beurre blanc rarely misses, and it really delivered here. Super rich, great balance, and the fish was perfectly cooked.
Orkney Scallop with Cauliflower Purée, Sliced Cauliflower & Verjus Sauce – Massive, incredibly sweet scallop with a velvety purée. The ground hazelnuts added an unexpected crunch and nuttiness, but were a bit too overpowering for my liking.
Scottish Lobster Tortellini with Lobster Bisque, Lobster Foam – The lobster itself was super sweet and well-prepared. Bisque was deep and seafood-forward, though I could’ve used just a little more acidity to balance it out.
Monkfish with Winter Mushroom Purée & Green Peppercorns – The monkfish was cooked beautifully. The puree was very buttery, making for a luxurious pairing. The green peppercorns gave it a nice little spice pop.
Carrot & Ginger Cordial with Sour Apple Foam – Refreshing palate cleanser, nothing special.
Ginger Polenta Cake with Ginger Beer Foam, Rhubarb Sorbet, Olive Oil & Verbena – Pleasant but not the most memorable. Good, refreshing pre-dessert.
Dark Chocolate Mousse with Olive Oil Tuile, Black Sesame Tuile & Ricotta Ice Cream – This was a good closer. The mousse was delicate yet rich, and the salt in the ricotta ice cream gave it a great balance. The tuiles added a nice crunch.
Tasting menu price was £125pp. Probably one of my favorite 1* restaurants in London now since I'm a seafood fan.

Thanks for the report — it was on my list for a trip next month but it’s moved further up as I’d like something that’s solo-friendly, tasting format and ideally counter-based.
Most things seems to be vaguely “Modern British” and I’m not sure I want to eat another deer or such.
