Not really carnitas I know. But simlar process. Rubbed a pork butt with Mexican Seasoning. Roasted dry in the oven all day. Shredded when 200 internal like pulled pork. Then for super bowl tossed in reserved pork fat from roasting and a little more seasoning broiled to crisp and did nachos. Left overs I did same and did tacos for dinner yesterday.
