The Kimchi at Let’s Meat?

I’ve been there a few times and I’m blown away by their kimchi every time. Does anyone have any clue at all – even an educated guesstimation – as to what kimchi they are using? I use Bing Gre Kimchi, which I think tastes great but it suddenly pales in comparison every time I hit Let’s Meat lol.
