* 10lbs arbol * 3lbs garlic * 1lb scorpion * random quantities of salt and water * thinned at the end with vinegar by eye
This was about 8 hours of non-stop work. I fry the peppers in vegetable oil, confit the garlic, blend it all together with water in a giant 90’s Japanese Cuisinart I got off craigslist, food mill it then thin it and bottle it.
End result is an alarmingly hot, smokey sauce that people seem to really like.
