

Recipe I followed/created from lurking in this sub…
Feed starter – 40g : 40g : 40g (Starter : Water : Flour) and let double in size
Mix 100g of starter with 375g of water and 500g of flour
Cover & rest for 30 minutes ** Note the time, BF started – 6 hours until fridge (room temp ~71⁰F) **
Add 14g of salt and mix/make into ball
Cover and rest for 45 minutes
Stretch and fold dough in half 4 times (rotate bowl 90deg each fold)
Cover and rest for 45 minutes
Coil fold dough 4 times (rotate bowl 90deg each fold)
Cover and rest for 45 minutes
10.Coil fold dough 4 times (rotate bowl 90deg each fold)
11.Rest until 6 hours after step 3 time
12.Fold/roll dough a few times then move to a lightly floured basket.
13.Cover and refrigerate for 12-18 hours (cold proofing)
14.Preheat Dutch oven to 500ºF
15.Move basket from fridge to freezer while oven preheats (probably ~20mins, helps with scoring)
16.Dump dough from basket onto parchment paper, brush off excess flour and score
17.Move loaf with parchment paper into Dutch oven, add a couple of ice cubes behind parchment
paper, cover & bake for 20 minutes @ 425ºF
18.Remove lid and continue baking for ~20 minutes @ 425 ºF or until desired color
19.Remove loaf from Dutch oven and rest for an hour

How do you shape it and do you score it at all?
Nice ear! I love how it looks but it’s more of a pain to cut. My knife gets stuck on it haha
Do you put the ice cubes underneath or on the side? Everything else looks very similar to what I’ve been doing.
What is your recipe/changes to not have an ear?
Here I am trying to get an ear but my score always turn out flat! Looks pretty!
