Lemon Cream Cheese Pound Cake

✅For the Cake Batter:
150 grams butter, room temperature
140 grams caster sugar
Zest of 1 large lemon
15 grams honey
65 grams cream cheese
1 teaspoon vanilla extract
3 eggs (approximately 150 grams)
150 grams all purpose flour
1 teaspoon baking powder
1/4th teaspoon salt
30 grams lemon juice

✅For the Lemon Glaze:
75 grams icing sugar
4 teaspoons lemon juice

✅Notes:
1. Preheat oven to 160 Celsius
2. I’ve used a 7 inch loaf tin with about 3.5 inches height
3. Bake the Lemon Cream Cheese Pound Cake at 160 Celsius for about 55 minutes to 1 hour or until a skewer / knife / toothpick inserted in the centre comes out clean.

  2. Im going to double this and make in a bundt pan. I usually use the Barefoot Contessa recipe but I want to compare this with hers. Hers calls for thr juice of EIGHT lemons plus zest. Its the best I've ever had so if yours can compare, I'm gonna make the switch as juicing 8 lemons ca be quite a task! Lol
