750g water
1000g bread flour
22g salt autolayse (?) I forget the spelling.
Stretch and folds every 30 minutes 4x.
Bulk ferment 6hrs at room temp 68-70
Shape. Cold proof.
Shape in the morning to really create tension.
Bake 425F 45-50 minutes. Half covered in dutch oven, half not.

Existential bread
I’m going through the most difficult time in a long time. Making bread, eating buttered toast, coffee, running/walking/lifting weights are the only thing keeping me sane.
Hey there, making bread is awesome; I love it almost as much as getting outside on my mountain bike, skis or otherwise with loved ones. Let’s not, however, pretend it’s an alternative to mental health treatment by a qualified and registered therapist.
Getting a loaf to look that good may drive me to therapy.
