    **Chicken:**

    * ~2.5 lbs – boneless/skinless chicken thighs
    * 11 oz can – chipotle peppers in adobo sauce (chop the peppers!)
    * 3 tbps – taco seasoning (I make my own using [this ](https://www.allrecipes.com/recipe/222165/homemade-taco-seasoning-mix/)recipe)
    * 2 tbsp olive oil

    Combine all ingredients into a bag or container, and mix thoroughly. Let marinate for 2-3 hours.

    Place the chicken on a baking sheet, and cover with sauce remaining in the bag.

    Bake the chicken @ 400^(o) for ~10 minutes, then flip, cook another 10 minutes.

    Set the oven on MAX broil and cook the chicken until desired crispiness. I like my sauce to char a bit.

    Remove and let cool.

    Chop the chicken.

    **Other:**

    I combined the chicken with romaine lettuce hearts chopped, and ~0.4 cups of brown rice. I also boiled 2 cobs of corn and chopped for topping. Sauce is homemade salsa, found [here](https://www.thechunkychef.com/restaurant-salsa/).

    Low calorie (about 1/3 of my intake for the day) and high protein (about 50g) per serving.

    SO. FUCKING. GOOD.
