
This is my second time using the sous vide method. I put this on last night when I got home from work at 135° and set it for two hours, unfortunately I fell asleep and it ran for three hours. However, it came out perfectly. In my opinion it’s cooked all the way through, but rare the way I like it I would never have been able to achieve this cooking it any other way. I then seared it in a very hot pan for about 40 seconds on all sides.
