Mediterranean Turkish lentil Soup: Best for Women over 50 who need extra protein in your diet.
One pot meal, Use bone broth or chicken broth for extra protein
Every time you make it, try adding a twist to the flavor by drizzling with heavy cream, lemon juice, Parmesan cheese, or any other topping that complements the soup.
Ingredients:
• 2 cups red lentils (Rinse and Drain)
• 1 onion, chopped
• 2 tbsp tomato paste
• 5-6 cups of water
• 2 tbsp butter
• 1 tsp cayenne pepper (adjust to taste)
•1 tsp paprika
• Salt and pepper, to taste
• Fresh herbs (optional, like mint for garnish) or a splash of lemon juice
Directions:
1. Prepare the Soup:
o Begin by chopping your onion and sautéing it in a pot until it becomes soft and golden.
o Add a pinch of salt, pepper, and the tomato paste, stirring to combine and cook for about 2 minutes.
o If you like a bit of heat, add in the cayenne pepper and cook for another minute.
o Wash and drain your red lentils, then add them to the pot, mixing them in with the onion and spices.
o Pour in the water, bring the soup to a boil, then lower the heat and let it simmer for 10-15 minutes, or until the lentils are tender and fully cooked.
2. Blend the Soup:
o Once the soup has cooled slightly, use a hand blender to blend everything until it’s smooth and velvety.
3. Prepare the Butter Sauce:
o In a small pan, melt the butter and add paprika and cayenne pepper.
o Let it bubble gently for about 30 seconds, infusing the butter with the spices.
4. Serve the Soup:
o Pour the blended soup into bowls, then drizzle the spiced butter sauce on top.
o Garnish with fresh herbs like mint for a refreshing finish.
