

I always have my local butcher cut me 1½-2 inch ribeye for my birthday. This year, the young lady behind the meat counter must of misheard me. She returned with a 2¾ inch, 2.55 pound steak. Finally, after 3 days, I polished it off this morning. Salted, refrigerated over night, brought to room temp, baked at 275 F⁰ for 30 minutes, pan seared both sides and all edges, garlic butter basted low and slow for about 5min, rested with a dab of cowboy butter on top.
