I know what you’re thinking—an orange salad with garlic, onions, and smoked fish?! Sounds a little out there, but trust us, it’s delicious!
This dish is a true Mediterranean gem, packed with bold flavors and simple ingredients. If you love dipping bread into flavorful sauces, get ready, because the mix of olive oil, garlic, and fresh orange juice is out of this world!
Ingredients:
2 oranges
3 garlic cloves
2 fresh spring onions (cebolletas frescas)
Olive oil
Salt
Smoked cod (or smoked salmon as an alternative)
2 hard-boiled eggs
Black olives (optional)
Instructions:
1️⃣ Prepare the oil:
Heat a generous amount of olive oil in a pan. Add thinly sliced garlic and cook gently. Be careful! If the garlic burns, it will turn bitter. Once the garlic is golden, add the sliced spring onions and fry until they’re soft and cooked.
2️⃣ Prepare the oranges:
Peel the oranges and cut them into bite-sized pieces. Place them on a serving plate.
3️⃣ Assemble the dish:
Pour the warm garlic and onion-infused olive oil over the oranges. Season with salt.
4️⃣ Add the finishing touches:
Gently place the smoked cod (or salmon) and chopped hard-boiled eggs over the oranges.
5️⃣ Serve warm:
Enjoy as a light starter or a side dish, and don’t forget to have some good bread nearby—because dipping into that garlicky, citrusy oil is simply heavenly!
This might sound a bit crazy, but trust us—this dish is pure magic! The combination of sweet oranges, salty fish, and the richness of olive oil is truly unforgettable.
