Pancakes 152 calories:

Ingredients:
1. 200 ml of pasteurized egg whites
2. 20 g of oat beta glucan fiber powder
3. A pinch of salt (optional)

Mix the ingredients and whip until you get stiff peaks. This is really quick and easy because the beta glucan fibers draw moisture from the egg whites and help to make a stable foam.

Spoon up desired amounts of the batter into a nonstick preheated pan and spread it out so that it’s 1/2-1/3 inch thick. I made 4 pancakes 4-5 inches in diameter. Flip them over as soon as you notice they no longer stick hard to the pan, and do the same with the other side. Once you get this initial surface on both sides they don’t stick at all. Keep flipping them over to get an even surface and until they are cooked through.

You can add flavorings like vanilla powder or cinnamon, but be careful to add any fat to the batter because that might make the egg whites liquify again.

I served them with Aquafaba ice cream (15 calories) and a generous piece of Brie cheese, making this entire breakfast only 300 calories.
