Preparation:
Let’s marinate the shrimp first. Peel the shrimps, add 15 ml of olive oil, salt, garlic and paprika. Now let’s make the Citronette salad dressing. Rub the garlic and lemon zest about a teaspoon. Squeeze out 50 ml of lemon juice, add the zest, garlic, sugar, a little salt and 100 ml of olive oil. Whisk it with a blender. The sauce is ready!!! Cut the cherry in half, grate the parmesan cheese. Start frying the shrimp, about 3 minutes. Put the arugula, tomatoes, and mini mozzarella in a bowl and season with citronette sauce.
