It’s the best when you can have a delicious, healthy meal and there is no cooking involved. I make this greek salad a lot for lunch, and the citrus dressing is my favorite. I also always love to put marinated artichokes and I forgot to add them for the video 🤦🏻‍♀️ Add them if you want!

1 green bell pepper, chopped
1/2 red onion, chopped
1 cup grape tomatoes, halved
1 English cucumber, chopped
1/2 cup marinated artichokes, chopped (the ones I get are big so I don’t need that many)
1/2 cup Kalamata olives
1/2 cup Feta cheese, cut into cubes
1.5-2 cups Chicken, sliced or shredded (optional. I always buy a rotisserie chicken)
Mint leaves for garnish (optional)

Dressing

1/4 cup EVOO
1/4 cup orange juice
2 tbsp lemon juice
2 tsp Dijon
1 tbsp honey
1/2 tsp salt
1 tsp orange zest
1 tsp lemon zest

For the salad, add all the ingredients to a large bowl. Use more or less of them as you want. Make it your own! Then add all the dressing ingredients to a jar or bowl and whisk or shake to mix. Drizzle the dressing over the salad and enjoy!
