I've been really craving loaded nacho fries so I came up with this little recipe. It turned out really really tasty, I used cottage cheese and cheddar to make the nacho sauce! Definitely much lower calorie than the real thing.

I’m an actual old person when it comes to reddit so I’m not really sure if this is the way to do this, but this the recipe incase anyone else is interested: 193g sliced potato (I have a mandolin) tossed in 3g sunflower oil then pan fried with a sprinkle of salt. The nacho sauce is 25g shredded cheddar cheese with 50g of cottage cheese and two table spoons milk blended. The beef is 80g lean ground beef with the grease scoped out mixed with taco seasoning (I used a random blend taco spice I found online, you can totally just add a bunch of cayanne if you want spicy lol). After the beef is seasoned to taste take off the heat and mix the nacho sauce until fully combined, then serve over your potato’s and add whatever toppings you like!
Edit: forgot to include this but rinsing the potato slices with cold water before pan frying improves texture and flavor!

OP if you’re ever interested in having “traditional” fries, Ethan Cheblowski has an amazing baked fries recipe, they actually are crisp! Par boiling them in vinegar first also gives THEE most delicious zip of flavor!
