Fattoush – Traditional Lebanese Salad with Crispy Pita and Sumac Dressing

Fattoush is a popular Lebanese salad made with crispy toasted pita bread, fresh vegetables, and a flavorful sumac dressing. It’s a staple in Middle Eastern cuisine, known for its vibrant taste and refreshing crunch.

Ingredients:

✅ For the Salad:
• 2 tomatoes (diced)
• 1 cucumber (sliced into half-moons)
• 1 bunch of romaine or iceberg lettuce (chopped)
• 4 radishes (thinly sliced)
• 2-3 green onions (finely chopped)
• 1 bunch of parsley (finely chopped)
• 4-5 fresh mint leaves (optional)
• 1 pita bread (cut into small squares)
• 2 tbsp olive oil (for frying)
• Salt to taste

✅ For the Dressing:
• 2 tbsp lemon juice
• 3 tbsp olive oil
• 1 garlic clove (minced)
• 1 tsp sumac (adds tangy flavor)
• 1 tsp pomegranate molasses (optional)

Instructions:

1️⃣ Toast the Pita
• Heat a pan and add 2 tbsp of olive oil.
• Fry the pita bread pieces until golden and crispy (about 2-3 minutes).
• Remove and place on a paper towel to absorb excess oil.

2️⃣ Prepare the Vegetables
• Dice the tomatoes, slice the cucumbers into half-moons, and cut the radishes into thin slices.
• Tear the lettuce into bite-sized pieces.
• Finely chop the parsley, green onions, and mint.

3️⃣ Make the Dressing
• In a small bowl, mix lemon juice, olive oil, minced garlic, sumac, and pomegranate molasses.
• Stir well to combine.

4️⃣ Assemble the Salad
• Combine all vegetables in a large bowl.
• Pour the dressing over the salad and toss gently.
• Add the crispy pita right before serving to keep it crunchy.

This Lebanese Fattoush is a perfect balance of fresh, tangy, and crispy flavors. Serve it as a light meal or a side dish with grilled meats or hummus.
