Apartment living has forced the reverse sear in winter months and I don’t think I can switch back.

250 degrees for 35 min
Get my electric stove as hot as possible and render the fat side for 45-60 seconds, followed by 90 seconds each side in avocado oil

Rest for 10-12 min with some kerry gold, slice, hit it with a drizzle of olive oil and a pinch of finishing salt

    Looks incredible but you’ll learn there’s no best way to cook a good steak. It’s all about the style you’re in the mood for. Something about what’s old is new again.

    I don’t like using all that lump wood to get my grill going. It can cook about three batches of meat so it’s pretty wasteful to cook and share one steak

    Why muck up a steak on a char grill when you can have this! Char grills are for backyard BBQ’s the best come off a hard sear, especially in cast iron, especially basted in butter.
