I have some experience with sourdough in bakery kitchens, but it is a whole new thing to do it alone at home. I don't have the nice stable ovens and best baking environment at home, so it's a whole new set of challenges.     Like Fezzik in the princess bride, it makes sense that wresting at smaller scale can be just as hard as scaling up. The tartine country loaf is a fantastic recipe!
