I had extra dough for another pie shell leftover so I made another pie. It’s a dark chocolate pudding in a butter pie shell, all made from scratch, with whipped cream and chopped bitter sweet dark chocolate chips layered into the sweetened whipped cream topping.

  1. Pie filling recipe:

    – 1 ½ cups of sugar

    – ¼ cup of corn starch

    – large pinch of salt

    – 2 ½ cups of full fat milk

    – ½ cup of heavy whipping cream

    – 4 egg yolks

    – About 1 cup (or between 6 to 8 oz) of bittersweet dark chocolate chips

    – 1 splash of vanilla essence

    – 2 tablespoons of unsalted butter, cut into small cubes

    – Sweetened whipped cream and bit of extra chopped chocolate chips for the topping

    After blind baking the pie shell with some rice as a pie weights, I poured the chocolate chips in a mixing bowl with the butter for later. In a separate saucepan, I combined the sugar, cornstarch, pinch of salt, milk, cream and egg yolks and whisked thoroughly to combine before heating on a medium to low flame. The mixture was heated and whisked continuously until it thickened and bubbled into thick pudding consistency. It was then removed and poured into the mixing bowl on top of the chocolate chips and butter while still hot. I then added the splash of vanilla and began folding everything until the chocolate and butter was fully melted and fully incorporated. After adding the mix to the cooled pie shell, the pie was chilled for several hours, allowing to set overnight is best. Meanwhile, I, of course, licked the spoon and bowl clean. 🤤

    Later, I added two tablespoons of sugar to a cup of whipping cream and whipped it by hand. Most of the cream was then layered on top of the pudding. Chopped up chocolate chips were sprinkled on top separately rather than mixed in before hand for better visual appeal. And the rest of the cream was placed on top of that and that top layer of cream was spread thinly with a spatula until the chopped chocolate chips became visible giving it the look that the chocolate is suspended in the cream rather than turning it brown like mud. And lastly, I added just a spoonful more of chopped chocolate chips on top of the center.

    Should be served very chilled.
