Kind of a lot for that pot. If you start out with a splash of water at high heat the steam will knock them down, then turn the heat down. The steam will make them floppy so you can actually stir and turn them over without making a mess.
You might want to split between two pans, then consolidate if you don’t want to tend two pans.

Are you trying to caramelize them? If so there is not enough room in that pot. Onions also need to cook alittle longer
