For the past 14 years I have been lucky and used hand me down weber kettel grills. Purchased this yesterday and cant wait to use it. Definitely need to get the flattop insert and rotisserie setup for it. What should I make first?

Congrats… and welcome to the wonderful world of pellet cooking! As to your first cook… I’d say whatever sounds good to you. Pork butts are a common first cook though on a new smoker. Super easy first cook that’s hard to mess up.

You are going to enjoy it. I have been using mine since it came out.
You are going to have ash on your food still the burn in period is over which is a few cooks. If you don’t mind that, my suggestion smaller foods first, smoked cheeze it’s, cream cheese and other appetizers.
