This Chicken Cacciatore is an easy healthy meal to prepare for dinner. Just put it in the crockpot in the morning and it will be ready for supper. Add along with rice, noodles or mash potatoes and a vegetable. ENJOY!

INGREDIENTS:
Crockpot
8 to 12 boneless skinless chicken thighs (about 3 pounds)
2 medium green peppers, chopped
1 medium onions, chopped
4 garlic cloves, chopped
14 1/2 ounce can diced tomatoes
1 can (6 ounces) tomato paste
3/4 cup reduce-sodium chicken broth (you can add 1/4 cup dry red wine or dry white wine in place of 1/4 cup chicken broth if you want)
3/4 teaspoon salt
1/8 teaspoon pepper
1 carrot peeled and sliced
2 teaspoons dried oregano
1 teaspoon dried thyme
pinch of red pepper flakes
2 tablespoons cornstarch
2 tablespoons cold water

Place chicken in crockpot. In a medium bowl add the peppers, tomatoes, tomato paste, onions, broth ( wine if using it), garlic, salt and pepper. Combine and pour over chicken.
Add sliced carrots. Cook, covered, on low for 8 hours or high for 4-5 hours, until tender.
In a small bowl, mix the cornstarch and cold water until smooth. The last 30 minutes add the slurry to the crockpot, stir together. Cover and cook till thicken.
Serve over rice, noodles or mash potatoes. ENJOY!
