High Protein Potato Salad
Peace out carb coma! This high protein potato salad replaces most of the potatoes with eggs, doubling the protein and leaving you with a lighter salad.

1 large russet potato, skinned, diced and boiled
3 hardboiled eggs
2 stalks celery, diced small
1 serrano pepper, diced small
1 pickle spear, diced small
3 green onions, chopped fine
3 tbsp mayonnaise
¼ cup plain Greek yogurt
2 tbsp stone ground mustard
1 tsp celery salt
½ tsp smoked paprika
Salt and pepper to taste

Mash potato and eggs together in a large bowl. Mix in celery, pepper, onion and pickle. Fold in the mayo, yogurt, mustard, celery salt and paprika. Sprinkle in salt and pepper to taste. Top with more smoked paprika and green onion.
