24 hour cold fermented, naturally leavened dough.

Sir Lancelot flour
Water
EVOO
salt
Honey

Stretched in coarse semolina

Topped with milled whole peeled tomatoes (Stanislaus), shaved garlic, anchovy, evoo, Malden salt, peperoncini, evoo and dry oregano.

Baked at 550f in a blue steel pan on a baking steel.

    I have definitely made a pizza focaccia before. Super tasty. Reminds me of pizza sticks from that one place.

  2. You could probably get away with either. Focaccia topped with sauce or pan pizza.

    This is basically a variation on pissaladière! Flatbread from Nice, France. Tomato and anchovy, caramelized onion, and olives.

  5. This looks sooo good. An upscale Italian restaurant makes something similar to serve as table bread. Your post just made it click for me that it’s just focaccia with sauce on it! I think I make have to make this next time I make sauce 👀

    One of my favorite ways to make focaccia is to top it like a pizza. It is both pizza and bread.

    Pizza has 3 necessary components: dough, sauce, cheese. It is fabulous but not pizza.
