**Mediterranean-Inspired Salmon Tartare**
¼ LB Sashimi Grade Salmon
½ TBSP Capers Finely Chopped
½ tsp Maple Syrup
2 tsp Lemon Juice
1 tsp Dijon Mustard
1 TBSP Shallots Finely Chopped
1 TBSP Extra Virgin Olive Oil

**Crackers**
Rice Crackers for Tuna
Pita Crackers or Potato Chips for Salmon
