Only change I had to make was to add more flour to the dough as it was REALLY wet while kneading it in the stand mixer. But was careful not to add too much.
Other thing is I didn’t put nearly enough semolina flour on the parchment for the 2nd rise, so was a little tricky getting them from the parchment to the hot pan. But worked out ok!
