So the walk-in is in the basement, and if not in use for its intended purpose we often store peeled potatoes overnight in the blast-chiller in the kitchen. Just to save bringing them back upstairs first thing in the morning. Blast-chiller/freezer that is.

06.30, saturday morning. I guess I'll start my shift by peeling potatoes today.

Time to practice those ice carving skills!

You need to run defrost cycles on your blast chiller. It shouldn’t be freezing stuff solid.

If you’re consistently peeling that many potatoes, you will absolutely save on labor with a drum peeler.

OK, seems as good as any way to start the day.

Put them in the dishwasher with the soap turned off?

  6. Just put it out as is on the buffet line. $10 gets you 10 licks. $20 gets you 50

  7. Some hot water to knock it out of the plastic GN then place the whole thing in a perforated steel GN and steam it✌️

Wow. That’s some beautiful, clear ice, though.

Many people don’t know this but the fryer does dual duty as a defroster. Just, like, get the fryer up to temp and toss that guy in.

Nothing like a curveball right before brunch (or a Saturday dinner shift?). Hope the shift wasn’t/isn’t too brutal
