I'm about halfway through it in 4 hours I cant help myself. It's gotta be the best tasting steak I've ever cooked.

    Doesn’t look raw, but very on the rare side; with such a fatty cut, I’d personally also prefer it a bit further done so that the fat is more rendered.

    It’s called a meat thermometer people. Then there is no question as to how done it is or is not.

    Not looking at pictures from phones and reviewing on phones that may or may not have decent color rendering.

    That said, much of the fat is not render, still white. So undercook from my opinion “looking at a picture”

    It looks good. My preference would be a hair more done, but I med rare+. Tons of folks here would love it, but I can’t say I’m surprised kids wanted a bit more.

    Definitely under. Fat is white still. For thicker and fattier cuts like this it’s essential you give it enough time to come to room temperate and a little time in the oven. Butter basting is also a good option if you don’t want to use the oven to help render all the fat, but you will need to allow it more time to rest before cutting into it.

    Whether it’s medium rare or not is only half the issue.

    The problem is you haven’t rendered the fat properly which is unpleasant.

    Getting perfect medium rare but not rendering the fat is a bit like getting the perfect sear but not cooking the middle.

    You have to do both.

    Yeah this is about as close to rare as you can get without being rare.

    Probably medium rare temperature (low end of, looks like) but cooked too quickly to render the fat
    Which is also the reason it is seen as “raw” when it isn’t, or “too rare” when it isn’t

    Was the temp around 135 when it was done resting? If so then yes I’d call it medium rare

    Honestly when you have fat like that, you need to go a full medium, imo.

    I find fatty bits like that super unappetizing.

    That’s pretty much on the verge of still raw.. definitely wouldn’t eat myself. I like rare but not raw rare
