For my zucchini lovers. I bought a large bag from Costco and was looking up interesting new recipes because I get tired of just sautéing or oven baking them. Found this link ( https://www.allrecipes.com/recipe/223411/zucchini-and-carrot-coleslaw/) here to a zucchini slaw! I made mine very creamy with the miracle mayo as well as Greek yogurt. For seasoning I added a tablespoon of monk fruit sugar instead of real sugar because I like my slaw a little sweet, also salt to taste and a bit of apple cider vinegar for some acidity.
About 55 cals for 100 grams. Adjust the levels of mayo and volume of veggies and seasonings to your liking.
