Have some discard from my refresh that I wanted to use. Probably pretty similar to other discard recipe out there but I based this on an AP Loaf I am also baking.

Sourdough discard sandwich bread ( in Pullman pan)
200g discard (100% hydration)
5g instant yeast
250g water
400g AP flour
1 TB sugar
10g salt
2TB butter

Mix dough except salt and butter until dough forms
Add salt until even
Add butter and knead until smooth ball ( if possible- shaggy is ok too) but pass window pane test
Do a couple stretch and fold ( my dough never really held a tight ball)
Let rise until double ish and side bubbly
Flip out and split into 2. Pre shape
Let rest for 15 min. Shape and put into Pullman pan
Let rise until about 80% to the pan
Lid on and bake at 350 for 40min

    Ooh Pullman sourdough French toast is my favorite way to have sourdough! I’m sad I didn’t get an invite, it looks amazing.

    I needed a loaf quickly for the next morning’s lunch packing routine. Rather than run out to the store, I decided I’d try a discard sandwich loaf with a yeast-cheat. Gotta say it was beautiful and surprisingly delicious.

    I feel like shouting “I baked with yeast, and I am NOT ASHAMED!”

  6. Would it be okay if I used a glass bread pan? I have a lot of discard I would like to use for bread.

    I just started baking with sourdough a few months ago. I tried to do a sandwich loaf and it was still raw-ish in the middle I put it back in for more time, and when I took it out and it was still not cooked all the way through.. so I don’t know what’s going on I’m gonna try different recipe.
