Caprese is a classic salad that is so fresh and delicious. It’s pretty simple and focuses on quality ingredients that are pretty iconic in their pairings. To elevate this salad, we are going to blend some aromatics with our olive oil to add another layer of flavor that will provide some added interest to the dish. It is so delicious and can be easily made for an individual portion, or larger for hosting purposes…or if you just have a big appetite.
Ingredients (1-2 servings)
– 1 large tomato
– Fresh mozzarella (same amount as the tomato roughly)
– Basil
– Salt
– Pepper
– Balsamic glaze
– 1/4 cup olive oil
– 1 garlic clove
– 1/8 cup roughly chopped parsley (or 2-3 stalks)
Recipe (1-2 of servings)
1. Add garlic clove, pinch of salt, olive oil and parsley to a tall cup and blend with immersion blender until smooth
2. Slice tomato to the same thickness of mozzarella, or if using unsliced mozzarella, slice both tomato and cheese to equal sizes (around 1/4 inch)
3. Arrange the tomato and cheese, alternating between slices of tomato and cheese on a plate
4. Salt and pepper pretty liberally
5. Add the olive oil immersion on top
6. Add a generous drizzle of balsamic glaze
7. Top with basil (you can use whole basil leaves if they are small or you can also give it a rough chop)
8. Serve and enjoy!
