Piadina romagnola is a popular Italian street food that is actually easy and quick to make. It’s so versatile and you can enjoy them in various recipes:

Here piadinas are gluten-free and prepared with quinoa and pea flour, but you can also make them with millet, rice and buckwheat flour. Actually, psyllium cuticle is a key ingredient for making elastic and easy to roll piadinas. However, pea piadina (or other legume piadina) are not flexible enough to be rolled, but they’re still delicious and you can enjoy them for lunch or a savory breakfast.
And the last thing to say, piadina tacos and chips can be burned easily, so keep an eye on them when they’re in the oven.

Quinoa piadina:
∙ 300 g Quinoa flour
∙ 25 g Psyllium cuticle
∙ 3 g (~ 1 tsp.) Baking soda
∙ 30 ml Vegetable oil
∙ 340 ml Water
∙ To taste Salt
Gratin Piadinas:
∙ 5 Quinoa piadinas
∙ 100 g Turkey breast or bresaola
∙ 5-6 radicchio leaves
For béchamel:
∙ 60 g Quinoa flour
∙ A pinch of salt
∙ 500 ml Almond or soy milk
∙ 2 tbsp. Vegetable oil
∙ A sprinkling Oregano
Banana & Chocolate Piadina Rolls:
∙ 1 Quinoa piadina
∙ Nutella
∙ A banana
∙ To taste Walnuts or almonds
Piadina Cannoli:
∙ 180 g Tuna
∙ 1 tbsp. Mayonnaise
∙ A bunch Parsley
∙ 2 Quinoa piadinas
∙ To taste Chopped walnuts or almonds
Piadina Apple Tacos
∙ 3 Large apples
∙ Half a lemon
∙ 1 tsp. Cinnamon (or 1 pinch of cloves or cardamom)
∙ 4 Quinoa piadinas
To brush the piadinas:
∙ 30 ml Vegetable oil
∙ A generous tsp. Cinnamon
∙ Honey (optional)
Piadina Chips:
∙ 3 Quinoa piadinas
∙ 30 ml Vegetable oil
∙ 2 tsp. Oregano
∙ A pinch of salt
Peas Piadina:
∙ 200 g Pea flour or another type of legume flour
∙ 12 g Psyllium cuticle
∙ 4 g Baking soda
∙ 30 ml Vegetable oil
∙ 130 ml Water
∙ 200 g Turkey breast (or chicken)
∙ Salt
∙ To taste Mayonnaise
∙ 3-4 Salad leaves
∙ A cooked beetroot
