Rice bowl: sauteed the carrot and red pepper with garlic separately, i added some broth that i made from leftover chicken bones and veg scraps. For the beef, brown minced beef then add the sauce, I added the broth again coz i have it handy, bt not necessary. I blanched the spinach with boiling water, squeezed out the water then add sesame oil, salt and minced garlic. Boiled eggs: put eggs in rolling boil wafer for 7 mins, ice!
2. Quiches: 180 degree C on your oven. 4 filo pastry sheet cut in half, layered with olive oil on round pan, for the filling, blend cottage cheese til smooth just mixed everything else except the feta cheese, salt n pepper to taste, pour the mixture to the filo layered pan, 45-60 minutes in the oven, i added 3 minutes on 230 C cause mine wasn’t browned to my liking after 60 mins
Also pro tip: these are some dishes that i find freeze well and doesnt change a lot in texture after heating, so id always make more than what i need that week.
I like your diet. Almost said change white rice for brown rice but no need really, there’s plenty of nutrition elsewhere. You’re a conscientious eater 👌
