If 90 minutes worked and gave you the result you wanted, do 90 minutes

I never do overnight lol, I do the bare minimum to get crispy wings in my gullet asap

Next time you have 90 minutes, pop them in the over at 200 degrees and flip them after 45 minutes. They dry out pretty nicely. Two hours is a little better.

I think even Kenji said 2hrs would work. I want to say as little as 15 minutes according to his video

Kenji’s salt ratio is too fucking high. Crispy, but the salt cuts through any sauce, period

I gotta say, I love the crispiness of kenji’s recipe. The last couple of times I made it, I feel like I could taste the baking powder.

I had to search these because I planned on making them this week… And boy oh boy… Kenji has sure, uh… Been enjoying his own cooking a little too much lately it seems.
That said, I don’t have a rack right now as I’m travelling. Would this work without?
