70 grams starter
385 grams warm water
MIX
550 grams bread flour
10grams salt
MIX
rest 30 minutes, stretch and fold
X3
Rise until doubled
Shape and place in banneton
Cold proof overnight
Score and bake 450F covered for 30 minutes, then uncovered for 20 minutes
Is my usual but for open baking I preheated a loaf pan then poured boiling water into in on bottom rack. Loaf on top rack on a pizza stone. Pulled the pan out 30 minutes in and then only an additional 15 minutes

Either that or you’re expanding the idea of artistically shaped loofs. Who knows what shape the next loof will be
This just means your oven does not retain enough steam. Similar experience I had when trying to open bake in my oven.
