Two days into planting my pepper seeds using heat mats ans ziploc trays I'm seeing a little mold on the top. I might have sprayed too much water on them before putting the bags on top. Can I just remove the moldy spots on top or am I totally screwed now on these?

It’s fine, you can remove it, leave it, let the top layer dry out a little, or just break it up. This amount won’t harm your seeds or seedlings.
Do you have a fan nearby?
I would not worry about it at this level – it’s normal and not going to hurt your peppers
Little mycelium; soil has active life in it. I’m a new grower, started my first seeds back in November last year. I got some on my first seedling tray and spent hours looking for cures; by my 3rd or 4th tray, I just started to ignore it. Early on, I did lose a good portion of a tray to damping off before getting an oscillating fan, so mold can be an issue if the moisture levels are really high (I was overwatering) in the soil, but for the most part it’s innocuous.
Bottom water later on but at first try cinnamon (good one! and very dusty) or hydrogen peroxide 3% diluted with water ¼ or something like that.. but if it’s just on top, scratch it away and don’t worry much 🌱
