Lomo Saltado with leftover fries – recipe from yesterday’s post (under $10!)

    I was sure I wasn’t the first, nor the last person to come into possession of fries for free – so I set out to find the most delicious, nutritious budget recipe to use them in. And I think I did!

    This fun steak dish comes from the Peruvian-Chinese wok tradition.

    I used all items I had on hand, including the steak, but it would’ve cost very little at the store to make this.

    half-pound steak, $3.72 + 1 red onion, $1.09 + 1 tomato, ~$0.50, mini bell peppers, ~$1.00, and aji panca paste, which I paid $1.99 for the jar. The only other ingredients are salt pepper, and a splash of oil and red wine vinegar. Plus of course the cost of your leftover fries. all-in, about $10 makes about 2 or 3 servings.

    Process:

    1. Slice the beef as thin as the fries and marinate in panca, and a touch of vinegar+ olive oil for a few hours.
    2. Slice your vegetables as thin as the fries.
    3. Sautee the beef in the wok for 1 minute on medium-high. Remove beef and separate.
    4. On high heat, add the onion to the liquid and stir fry until dry. Then add peppers, then add tomato
    5. Do not overcook – only flash everything for 1 minute together on high heat
    6. Add beef, toss for 1 more minute and serve hot.

    Rice is traditionally served with this but I don’t eat it so I didn’t make it.
